Oreo Cookie Balls

Ingredients:
1 package (14.3 ounces) Oreo cookies
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla extract (optional)
12 ounces semi-sweet baking chocolate or melting wafers, chopped
Sprinkles or crushed Oreo crumbs for decoration (optional)

Directions:
Begin by finely crushing the entire package of Oreo cookies in a food processor or by placing them in a zip-top bag and crushing them with a rolling pin until they become fine crumbs.
In a mixing bowl, combine the crushed Oreo cookies with softened cream cheese and vanilla extract (if using). Mix thoroughly until well combined and a dough-like consistency forms.
Shape the mixture into 1-inch balls by rolling it between your palms. Place the balls on a baking sheet lined with parchment paper.
Chill the Oreo balls in the refrigerator for about 1 hour or until firm.
In a microwave-safe bowl, melt the semi-sweet chocolate in 30-second intervals, stirring between each interval until completely melted and smooth.
Using a fork or toothpick, dip each chilled Oreo ball into the melted chocolate, allowing any excess chocolate to drip off.
Place the dipped Oreo balls back onto the parchment-lined baking sheet.
If desired, sprinkle the dipped balls with sprinkles or crushed Oreo crumbs while the chocolate is still wet.
Refrigerate the coated Oreo balls for another 10-15 minutes or until the chocolate is set.
