Ingredients:
1 (6-pound) bone-in prime rib roast
Salt and black pepper to taste
1 tablespoon olive oil
2 tablespoons minced garlic
2 tablespoons dried rosemary
2 tablespoons dried thyme
1 tablespoon dried oregano
1 tablespoon onion powder
1 tablespoon paprika
Directions:
Preheat your oven to 500°F (260°C).
Season the prime rib roast generously with salt and black pepper, rubbing it into the meat.
In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, oregano, onion powder, and paprika to form a paste.
Rub the herb paste over the entire surface of the prime rib roast.
Place the seasoned roast on a rack in a roasting pan, bone side down.
Roast in the preheated oven for 20 minutes to sear the meat.
Reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired level of doneness, about 2 to 2.5 hours for medium-rare.
Let the prime rib rest for 15-20 minutes before carving.
