Christmas Cake

Ingredients:


1 cup unsalted butter, softened
2 cups white sugar
4 large eggs
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1/2 cup mixed candied fruit
1/2 cup chopped pecans
1/2 cup raisins
1/2 cup chopped dried apricots
1/2 cup chopped dates

Directions:


Preheat your oven to 325°F (165°C) and grease and flour a bundt pan.
In a large bowl, cream together the softened butter and white sugar until light and fluffy.
Beat in the eggs one at a time, ensuring each is well incorporated.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix well after each addition.
Stir in the vanilla extract, followed by the candied fruit, pecans, raisins, dried apricots, and dates.
Pour the batter into the prepared bundt pan, spreading it evenly.
Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
